I make milanesas at home when I don’t really have time to cook. Here’s my question is it best to bread them yourself or are they just as good prebreaded by a reputable butcher? Like you said, it’s best to give the breading time to meld with the meat and I don’t always plan properly.
I prefer to bread them myself because that way they're seasoned and breaded the way I like. But I cook for a living and it's second nature. I don't have to plan it out. At the same time sometimes I'm feeling lazy and I'll buy them premade from a local butcher whose version I like too.
